Carrot cake soft cookies

 
How cute are these home-grown veggies! I don't know why we didn't start growing our vegetables earlier because it really is so easy and quicker than I expected! Also, nothing beats the feeling of picking your own veggies:D!

I used these cuteeeeee carrots to make some gluten free carrot muffins and some carrot cake soft cookies. These cookies are soft, slightly chewy and nicely spiced with cinnamon.

CARROT CAKE SOFT COOKIES

  • 85 g grated carrots (about 2 small carrots)
  • 1 egg
  • 40 g honey
  • 30 g olive oil
  • 50 g yogurt
  • 40 g oats
  • Half a tsp of baking soda
  • Pinch of salt
  • Cinnamon (as much as you like, I use quite a lot!)
  • 50 g whole wheat flour
  • 20 g broken nuts, I used pecans (optional)
  • 25 g raisins (optional)
  1. Mix all the wet ingredients together :honey, oil, yogurt, egg, carrots, raisins.
  2. Combine the oats, baking soda, salt, cinnamon and flour together and fold into the wet mix. Once you obtain a wet dough, fold in your nuts and leave the mix to refrigerate for about 5 minutes.
  3. Drop spoonfuls of the batter on a greased baking tray or a non stick baking sheet and bake these cookies for 15- 20 minutes at 180 degrees Celsius, until golden brown. Leave to cool before removing from the baking tray.
The picture does not do these justice, they look rather dry and crusty here! But they really are moist and light, yummy soft cookies :)

Smoked salmon blinis

This is the perfect nibbly snacky finger food-type dish! Very easy to make in advance and can be kept in the fridge for a couple of hours, which saves all the last minute rushing around at dinner parties etc. Blinis are traditionally made with yeast, but baking powder seems to do the trick too!

BLINIS
Makes about 30 mini blinis
  • 1 Egg
  • 75 g whole wheat flour
  • 1 tsp baking powder
  • Half a tsp baking soda
  • Quarter tsp of salt
  • About 5 tbsp of milk
  • 20 g olive oil
  • 40 g yogurt
  1. Mix the flour, salt, baking powder and baking soda well together until nicely combined.
  2. Make a well at the centre of the dry ingredients, slowly combine in your egg, yogurt and oil until you obtain a smooth batter. It should be quite thick at this stage, add in enough milk to loosen up the mix, you are aiming for a cake-like batter with a dropping consistency whilst still being thick enough for the blinis not to stick together.
  3. Once your frying pan is hot, set the heat to medium-low, and drop teaspoons full of the batter on the pan to form mini pancakes. Flip them once they start bubbling. Once done, set aside to cool.

Top your blinis with whatever you desire, I used light cream cheese and slices of smoked salmon.

Homemade dumplings!

Ok, so I've been wanting to make some sort of Chinese dumpling for ages but have always been put off by the lengthy process associated with making these balls of deliciousness!

Apparently, dim-sum chefs take years to learn how to perfect the art of dim-sum making which requires fast yet delicate fingers. Mine would probably not past the test, with their messy look and tears here and there, but they are a yummy, rustic & quick take on dim-sum which can easily be prepared at home :).


I made two types: a veggie option: Tofu, beansprout & chive dumpling & a seafood option: a prawn, bamboo shoot and chive dumpling

VEG FILLING
  • Half an onion, finely chopped
  • 2 cloves of garlic, crushed
  • 1 tsp crushed ginger
  • Some sesame oil (or normal cooking oil)
  • 1 square of firm tofu, cubed
  • 1 small bunch of chives, chopped (I kept a few stems to tie the tops of the dumpling parcels)
  • Handful of beansprouts
  • 2 tbsps soya sauce
  • Black pepper
  1. Heat the oil in a pan and fry the ginger, garlic and onion. Add in the chopped chives, beansprouts and tofu and stir fry for a couple of minutes. Season with black pepper and soya sauce.
PRAWN FILLING
  • A  bunch of chives, chopped
  • Approximately same amount of prawns (as chives), chopped
  • Bamboo shoot, finely chopped (Half to 1 whole one should be fine)
  • 1 tbsp soya sauce
  • 1 tsp sugar
  • 2 tsp sesame oil
  • 2 tsp cornflour
  • Black pepper
  1. In a saucepan of boiling water, add a teaspoon of salt and blanch your chopped chives for about a minute. Drain, rinse with cold water and squeeze to get rid of excess water.
  2. Mix the cooked chives with the rest of the ingredients until well combined. This filling cooks when the dumplings steam so make sure to give these ones a good 10-12 minutes cooking time and make sure your prawns are not whole.

MAKING THE DUMPLINGS
  • A few wonton skins (ready made dim-sum skins), I got a big pack from Chinatown for Rs 31, only used about a quarter of the packet.
  • Damp cloth, make sure you keep the wonton skins covered with this so that they don't dry up.
  • Water (to stick the edges)
  • Patience and delicate hands!
  1. Place a square of pastry on one of your hands, with your other hand, dunk one finger into the water and wet the edges of the square. 
  2. Place 1-1.5 tsp of filling in the centre of the square.
  3. With the hand that is holding the square, delicately pinch one corner of the pastry and with the other hand, slowly keep pushing the rest of the pastry to form beautiful folds that meet at the centre, securing the filling.
  4. Once all the folds are together, with two fingers from each hand, gently push the folds towards each other just to secure it.
 

I hope those directions made sense! Don't let them put you off, once you get the hang of it, it won't take you much time at all. Just remember to be very delicate, my first few attempts were horrible! I did try to use two sheets of pastry for some but then stuck to one layer for a lighter dumpling:). Also make sure you use only about 1 -1.5 teaspoon of filling per dumpling, so that they don't burst when cooking.
If you are not steaming these straight away, place them on a plate dusted with cornflour, so that they don't stick and keep covered with a cloth.

4. Steam the dumplings for 10-12 minutes.

On another note, I'm so proud of how much I've been pushing Tom, although he could make a bit more of an effort, he has lost 10 kgs so far in 7 weeks:)!!!

Steamed chicken with Chinese mushroom and fungi- all time favourite!

This is the dish that I miss the most when away from home, nothing beats home cooking! I could so do with some of this right now, went to Ministry of Sound last night, just woke up and haven't felt this hungry in ages, I need food in my belllllllllly!(Still pretty hyper, soz!)


My dad's cooking is so simple and quick but always full of flavour! It was really hard getting my dad to write this recipe down, quantity wise he was always like "hmm, a bit of this and that" but we got there in the end:)!

STEAMED CHICKEN WITH CHINESE MUSHROOM AND FUNGI
For  4-5 servings
  • 1 whole chicken, roughly chopped up
  • 10-12 dried mushrooms, soaked for atleast 1 hour
  • Handful of wood ear fungi, soaked for atleast 1 hour
  • 3 tbsp soya sauce
  • 2 tbsp oyster sauce
  • 1 tbsp cornflour
  • Coriander
  1. Rub your chicken pieces with the soya sauce and cornflour until well coated.
  2. Drain your mushrooms and fungi and chop into bite size pieces, getting rid of any hard grizzly bits.
  3. Mix everything together adding in your oyster sauce and leave to steam for about 30 minutes, serve with lots of chopped coriander.

Eggless Lemon poppy seed muffins

Wow these babies rose so much within the first two minutes of being in the oven!! These are deliciously light and zesty- perfect summery treat.


LEMON POPPY SEED MUFFINS
  • 2 tsps poppy seeds
  • 130 g mixed flour ( self raising and wholewheat flour)
  • 1 tsp baking powder
  • Half a tsp of baking soda
  • Pinch of salt
  • 80 ml milk, I used non- fat
  • 35 g olive oil
  • 3 tbsps honey
  • Zest and juice of 1 small lemon 
  1. Preheat the oven to 175 degrees Celsius.
  2. Mix the flour, b.soda, b.powder and salt together.
  3. In another bowl, mix together the lemon juice, honey, zest, seeds, milk and olive oil until well combined.
  4. Slowly pour the wet mix into the flour whilst stirring until you obtain a thick consistent batter.
  5. Place spoonfuls of the batter into muffin cases and bake for 10-15 minutes for mini muffins or about 20 minutes for normal sized ones.
 

Whenever there's a tiny bit of batter left or whenever making up a recipe from scratch, I always microwave a tiny amount for about 40 seconds just to test whether the consistency and taste is right!

Veggies for breakfast- Zoats!

Zoats= zucchini(courgette) + oats! Yes veggies in your oats! Sounds pretty gross but trust me this is pretty awesome. Courgettes are fairly bland tasting, they bulk up the oats, making for a less 'Carb-y' porridge breakfast.


ZOATS

  • Porridge oats
  • Grated courgette ( I used about 0.5:1 courgette:porridge, if that makes sense!)
  • Water or milk ( enough to cover the oats+ abit extra to cook it through)
  1. In a small saucepan, cook the oats+ courgette + liquid for a couple of minutes giving it a few stirs, until you end up with a creamy porridge.
  2. Top with anything you desire such as fruit, honey, yogurt etc etc!

Pumpkin soup

Third pumpkin recipe of the week, looks like I'm on a pumpkin roll! Oh gosh, I'm now thinking of making a pumpkin roll cake, mmm :)!
This was part of my meal prep for the week, made this one in a bit of a rush too, but turned out to be delish! I froze individual portions of this. Seems like I made this at the right time, my mum was feeling poorly the next day and was craving soup, as well as the fact that it is getting pretty chilly here on the island, perfect soup weather.

Once again, in the rush of meal prepping, here is a rubbish picture!


PUMPKIN SOUP
  • 1 onion, chopped
  • 1-2 cloves of garlic, minced
  • A couple of stalks of celery, chopped
  •  1 sweet potato/ potato chopped (to thicken it up)
  • 1-2 large cups of pumpkin, chopped
  •  1 veggie stock cube
  •  A couple of tbsps of oil
  1.  Heat up the oil, fry the onion and garlic till translucent, add in your rest of the vegetables and lightly fry for a couple of minutes.
  2. Crumble in your stock cube, and cover your veggies with enough water  to cook them down, you might need to add more as you go along.
  3. Once everything is soft, blend it all up and season with salt and pepper.
