Spent the morning enjoying this beautiful Mauritian weather, swimming and sun-tanning by the pool:)
- Mix together cubes of cucumber, tomato, mango (not overripe), finely chopped onions and lots of coriander. Add in some boiled prawns.
- Dress with lemon juice, chopped up chilli, salt and pepper.
- I served my prawn 'salsa' on a bed of leftover salad from yesterday and topped with some hemp seeds for some crunch.
