Marbled banana yogurt muffins

I hate Sundays:(! End to a lovely weekend and back to the routine of work soon!
We went on a boat trip Saturday, and although the weather wasn't the best, it still turned out to be a lovely day out, although I now have a rather red and sunburnt face!!!


 Just something slightly different to my usual banana oaty muffins. These are way lighter and softer- more cupcake like, and really yummy taste wise, you get to have 2 types of cake in one, without all the calories :D! banana and chocolate, definite keeper!!

CHOCOLATE BANANA MARBLED YOGURT MUFFINS
  • 3 ripe bananas, mashed
  • 2 eggs
  • 30 g olive oil
  • 100 g yogurt
  • 1 tsp vanilla ( i used a pod as well)
  • honey, to sweeten (I used 45 g)
  • 125 g whole wheat flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • Pinch of salt
  • 40 g dark chocolate, chopped
  1. Preheat your oven to 180 degrees Celsius.
  2. Mix the yogurt, eggs, vanilla, oil, baking soda, salt and honey together until uniformly combined. Fold in your mashed up bananas.
  3. In a small separate bowl, microwave your chopped up dark chocolate for about 45- 60 seconds until melted, making sure that it does not burn!
  4. Fold in the flour and baking powder into your banana, until you obtain a consistent batter. If it is too thick just add in a tiny bit of yogurt or milk.
  5. Once your chocolate has cooled, add in about half of the batter, and quickly mix until you obtain a uniform chocolate batter.
  6. In your muffin cases, scoop in just under a tablespoon of each type batter, preferably side by side so you can see the different colours from on top. 
  7. Bake for about 20 minutes, until an inserted toothpick comes out clean.
