Paleo Herb crackers

Morning:)
Just a quick link to a recipe I tried recently, these are great as a little snack or to have with cheese and dips. Also these are totally gluten free!:)

These do taste VERY WEIRD when warm straight out from the oven, but once they have settled and cooled their texture and taste seem to improve dramatically!
I didn't use the coconut oil in mine, as I don't see how 1/4 of a teaspoon would change much.

PALEO HERB CRACKERS
  • 2 cups almond flour
  • 1/2 teaspoon sea salt
  • 2 tablespoon favourite herbs of choice (I used 'Herbes de Provence')
  • 2 tablespoons water
  • 1 egg white
  • 1-2 tablespoon olive oil
  1. Combine all the dry ingredients together.
  2. Make a well at the centre of the dry ingredients, pour in your wet ingredients and knead together until you obtain a smooth dough.
  3. The recipe states the following :"Place dough between 2 sheets of parchment paper and roll out to an even thickness of about 1/8 of an inch.  Transfer parchment to a baking sheet pan and remove the top piece of parchment.  Using a pizza cutter trim off uneven edges of dough, then cut the sheet of dough into cracker size pieces/squares." Either do the latter or just pat the dough down using your hands on a greased baking tray, cut into squares. (They can be left next to each other as you don't stick or rise.)
  4. Bake the crackers for 10 minutes at 170 degrees Celsius, turn the oven off and leave in the oven for an additional 10 minutes.

DO NOT EAT WARM!! Enjoy:)
