Pumpkin soup

Third pumpkin recipe of the week, looks like I'm on a pumpkin roll! Oh gosh, I'm now thinking of making a pumpkin roll cake, mmm :)!
This was part of my meal prep for the week, made this one in a bit of a rush too, but turned out to be delish! I froze individual portions of this. Seems like I made this at the right time, my mum was feeling poorly the next day and was craving soup, as well as the fact that it is getting pretty chilly here on the island, perfect soup weather.

Once again, in the rush of meal prepping, here is a rubbish picture!


PUMPKIN SOUP
  • 1 onion, chopped
  • 1-2 cloves of garlic, minced
  • A couple of stalks of celery, chopped
  •  1 sweet potato/ potato chopped (to thicken it up)
  • 1-2 large cups of pumpkin, chopped
  •  1 veggie stock cube
  •  A couple of tbsps of oil
  1.  Heat up the oil, fry the onion and garlic till translucent, add in your rest of the vegetables and lightly fry for a couple of minutes.
  2. Crumble in your stock cube, and cover your veggies with enough water  to cook them down, you might need to add more as you go along.
  3. Once everything is soft, blend it all up and season with salt and pepper.
